Do you like Holly's aspic? I've been using her recipe for ages - until yesterday when I found an amazingly
different but just as easy to make substitute. Holler if your interested.
"Easy Tomato Aspic" from Betty's cookbook
1 can tomato soup
2 or 3 Tbsp. sweet relish
2 Tbsp. minced onion
2-3 celery ribs, minced
1-3oz. lemon jello (dry)
Heat soup to boiling point. Mix other ingredients (do not add any liquid other than tomato soup undiluted); pour hot tomato soup over this and stir until Jello is dissolved. Pour into six individual molds, or one large mold. Let congeal. (that's my favorite part of the directions!)
TOMATO ASPIC - Holly Dunaway
1 can stewed tomatoes
1 3 oz pkg lemon Jello
1/2 tsp salt
1 T vinegar
Bring tomatoes to a boil. Add remaining ingredients and stir until dissolved. Pour into tomato can or mold and chill until firm. Unmold, slice and serve.
TOMATO RASPBERRY ASPIC (new!)
2 C V8 Juice
2 T vinegar
1 1/2 T horseradish
3 oz package red raspberry jello
Boil juice and vinegar. Dissolve jello in juice, add horseradish. Mold and refrigerate.
